Tángyá chá

Tángyá chá · 唐崖茶

Tángyá chá (唐崖茶) is a green tea of Xianfeng County (咸丰县), Enshi Tujia and Miao Autonomous Prefecture, in the southwest of Hubei Province. The name comes from the valley of the Tangya River (唐崖河), where most of the gardens lie, and from the ruins of the residence of the Tangya tusi (唐崖土司城址), a World Heritage site. Two groups go under the protected name: white-leaf tea from the variety 白叶一号 and ordinary green tea; “white” here is the color of the spring leaf, not the class. Since 2020 the name has been protected as an agricultural product geographical indication, and since 2025 as a geographical indication product.

1. Classification and Origin

  • Type: Green tea (绿茶, lǜchá). The protection requirements give one description of the appearance — a needle-shaped, emerald-green leaf — and two groups of norms: for white-leaf tea (白叶茶, báiyèchá) and for green tea.
  • Name trap: “唐崖白茶” is not a white tea by class. A 2021 description on the website of the Ministry of Agriculture and Rural Affairs directly assigns tea from 白叶一号 to green tea, and the newspaper Hubei Ribao (2024) calls Xianfeng white tea a temperature-sensitive variety of green tea; the same is true of Anji Bai Cha.
  • Category: A green tea of the Wuling Mountains and a regional public brand of the county. According to the description on the ministry’s website, red tea, oolong, dark tea and “sun-dried white” (晒白茶) also go under the “唐崖” brand — these are lines of the brand, not the profile of the indication.
  • Origin: China, Hubei Province (湖北, Húběi), Enshi Tujia and Miao Autonomous Prefecture (恩施, Ēnshī), Xianfeng County (咸丰, Xiánfēng).
  • Protection zone: The towns of Gaoleshan (高乐山镇), Qingping (清坪镇), Tangya (唐崖镇), Qujiang (曲江镇), Pingbaying (坪坝营镇) and Chaoyangsi (朝阳寺镇), the townships of Huolongping (活龙坪乡), Xiaocun (小村乡) and Huangjindong (黄金洞乡), and Daluba District (大路坝区工委). The applicant is the Xianfeng County Tea Association (咸丰县茶叶协会).
  • Geographic coordinates: 108°43′33.09″–109°0′9.89″ E, 29°19′28″–30°2′54″ N.

2. History and Cultural Significance

  • History:
    • Old texts about the region. The description on the ministry’s website traces tea growing in Xianfeng back to the Three Kingdoms era and quotes the Records of the Lands of Jingzhou (《荆州土地记》): all seven counties of Wuling have tea, and it is the best. The Ming Shiwu Ganzhu (《事物绀珠》) lists the tea of Shizhou (施州), which included Xianfeng, among the 96 famous teas. These texts speak of the region, not of Tángyá chá.
    • The tusi. According to the newspaper Nongmin Ribao (2021), tea production was organized by the tusi, and thirteen old tea-and-salt trails carried tea out and brought salt in. Since 2015 the ruins of the Tangya tusi residence have been part of the World Heritage site “Tusi Sites”. According to Chinese Wikipedia, the domain of the Qin (覃) family existed from 1346 to 1735 — sixteen generations over 389 years — and ended with the transfer of the area to direct administration (改土归流, gǎitǔ guīliú). The journal Agricultural Products Market (2022) writes that three tusi domains stood on the Tangya River — Tangya, Longtan and Jindong — and that tea served both as tribute to the court and as a commodity to exchange for salt and war horses.
    • 2014. The county began to bring in the white-leaf variety 白叶一号 on a large scale.
    • 2018. A development plan for the regional brand “唐崖茶” was drawn up; management of the brand was entrusted to the county tea association.
    • 2019. Group standards for “唐崖白茶”, “唐崖绿茶” and “唐崖红茶” were issued, uniform in grading and packaging. On 26 September the name passed the expert review of the Ministry of Agriculture and Rural Affairs, and on 25 December it was included in the list for public comment.
    • 2020. On 30 April — the certificate of an agricultural product geographical indication (number AGI02943). In April the Tangya tea market opened.
    • 2021. The “唐崖” brand was submitted for recognition as a well-known trademark of China; the outcome is not named in the sources consulted. In the same year, according to the journal Agricultural Products Market, the county was among the first eleven counties that the ministry helped to build agricultural brands.
    • 2025. By announcement No. 640 of 16 July 2025 (published on 13 August), the China National Intellectual Property Administration recognized “唐崖茶” as a geographical indication product.
  • Name: 唐崖 — the Tangya River and the Tangya tusi domain; 茶 — tea.
  • Cultural significance: The brand is built on the tusi heritage; the information on tusi tea in the sources consulted comes from modern publications, with no primary documents among them. The journal Agricultural Products Market links Tujia “oil tea soup” (油茶汤, yóuchátāng) with tea: the leaf is fried in hot oil until crisp and then has water poured over it together with fried corn, rice, tofu, sesame, peanuts and walnuts. According to legend, retold by the journal, the Tangya tusi gave his warriors this soup before a campaign. The same journal recalls the Enshi folk song “Six Sips of Tea” (六口茶).

3. Botanical Description and Raw Material

  • Varieties / Cultivars: According to the protection requirements — 龙井43 (Lóngjǐng 43), 槠叶齐 (Zhūyèqí), 白叶一号 (Báiyè 1) and others.
  • White-leaf variety: According to the description on the ministry’s website, the leaf of 白叶一号 turns white when the temperature is below 23 °C, and as it gets warmer the whiteness goes away on its own; so the appearance shows that the tea is a spring one. Hubei Ribao (2024) gives a different range — 19–23 °C: within it the shoots are white with emerald veins, and above and below it the leaf turns green. The discrepancy remains. According to county data, by the end of 2022 white-leaf tea occupied 145,000 mu (51.2% of the county’s gardens), and 龙井43 — 30,000 mu.
  • Varieties from other provinces: According to a publication on the Pengpai portal, tea companies from Taiwan and Fujian invested in the county, and Hubei, Fujian and Taiwanese varieties and processing techniques came together here. The publication gives no variety names.
  • Harvest: According to the requirements — by the standard, in batches, repeatedly, leaving some leaves on the bush; paired leaves (对夹叶) of the same tenderness are picked clean.
  • Harvest time: According to the description on the ministry’s website, the tea comes onto the market from the last ten days of March through June.

4. Terroir and Cultivation Features

  • Region: According to the description on the ministry’s website — deep in the Wuling Mountains (武陵山), at the junction of Hubei, Chongqing, Hunan and Guizhou. The average altitude of the county is about 800 m.
  • Growing altitude: The gardens lie mainly in the valleys of the Tangya River basin, at an altitude of about 800 m.
  • Climate: According to the same description — a mild winter and a summer that is not hot, much fog and little sun: 14–16 °C on average over the year, 1460 mm of precipitation, 1062 hours of sunshine.
  • Soils: According to the protection requirements — well-drained sandy loam soils, a plow layer thicker than 50 cm, organic matter above 1%, pH 4.5–6.5. According to the same description, a soil survey in part of the county found strontium in addition to selenium.
  • Care under the requirements: The soil is loosened four times: before spring, after the spring and the summer harvests, and more deeply before winter (15–25 cm). Per mu, 200 kg of organic fertilizer or oilcake and 20 kg of potassium compound fertilizer are applied.
  • Scale: According to county data (2023), there are 283,000 mu of gardens, and output is 12,600 t across all classes. The journal Agricultural Products Market (2022), with the same area, names 149,000 farmers involved in the industry, 106 processing enterprises and an annual output value of more than 2 billion yuan; organic or “green food” certificates cover 120,000 mu, and “selenium tea” certificates 3,200 mu. A daily freight run takes the county’s tea to markets in southern Zhejiang.

5. Production Technology

The protection requirements do not give a processing technology. The description on the ministry’s website assigns “唐崖白茶” to green tea. Below is the general scheme of green tea, not a description of this particular tea:

  1. Spreading the fresh leaf (摊放, tānfàng).
  2. Fixation (杀青, shāqīng): Heating stops oxidation.
  3. Rolling (揉捻, róuniǎn).
  4. Drying (干燥, gānzào).

6. Organoleptic Characteristics

The protection requirements describe only the dry leaf; the rest comes from the description of white-leaf and green tea on the ministry’s website (2021).

  • Dry leaf appearance: According to the requirements — needle-shaped, thin and tight, “like an eyebrow”, emerald green, even and clean (外形针状细紧如眉,翠绿匀净). The ministry’s description for the white-leaf tea — “like an orchid”, emerald, “like jade”; for the green — a thin, round, straight twist, emerald, glossy and downy.
  • Dry leaf aroma: No descriptions in the sources consulted.
  • Liquor aroma: White-leaf — tender, high and lasting (嫩香高悦持久); green — tender chestnut, high and long (嫩栗香高长).
  • Taste: White-leaf — fresh, mellow, sweet and brisk (鲜醇甘爽); green — fresh, mellow, with a sweet aftertaste (鲜醇爽口回甘).
  • Liquor color: White-leaf — clear and bright (清澈明亮); green — tender green and bright (嫩绿明亮).
  • Spent leaves (wet leaves): White-leaf — tender, even “flowers”, the leaf white, the veins emerald (叶白脉翠); green — fine, tender, emerald and bright.

7. Chemical Composition

The 2025 protection requirements:

IndicatorWhite-leaf teaGreen tea
Tea polyphenolsno less than 11%no less than 11%
Water-soluble extractivesno less than 36%no less than 36%
Free amino acids (as glutamic acid)no less than 5%not standardized
Moistureno more than 6.5%no more than 6.5%

The 2021 description on the ministry’s website gave no less than 40% extractives for both groups; the 2025 requirements give 36%. In a paragraph about Enshi prefecture, the same description names an average selenium content in the tea of 1.068 mg/kg, without method or sample; no conclusions about health follow from this.

8. Brewing

Class practice for green tea: 80–85 °C, 3 g per 150 ml, a glass tumbler or a gaiwan, first infusion 40–60 seconds, two or three more infusions.

The description on the ministry’s website recommends a tea-to-water ratio of 1 to 50 and steeping for 2–3 minutes in a porcelain cup without a lid; first moisten the leaf with a quarter of the water.

9. Storage

Class practice. In airtight packaging, in a refrigerator, away from light, moisture and odors. The description on the ministry’s website advises drinking such tea quickly and keeping it in a separate refrigerator for tea: at 2–8 °C — up to 90 days, without refrigeration at 8–20 °C — about 60 days.

10. Price and Counterfeits

Price data are not found in the sources consulted.

  • How to avoid counterfeits:
    • Look for the geographical indication product mark or the agricultural indication mark.
    • Check that the tea was made in one of the ten units of the zone in Xianfeng County.
    • Remember that “唐崖白茶” is green by class.
    • Do not take other lines of the “唐崖” brand for the protected profile: red, oolong, dark and “sun-dried white” tea are not described by the protection requirements.

11. Interesting Facts

  • According to the ministry’s description, the leaf of 白叶一号 turns white at temperatures below 23 °C and turns green as it gets warmer, so the whiteness itself speaks of a spring harvest.
  • The county holds the titles “one of China’s hundred best tea counties”, “key tea-producing county of the country” and “model county for the development of white tea in China”, and a publication on the Pengpai portal also calls it “the first oolong county of Hubei”, with a white tea base of 3000 mu.
  • The brand lines are named by color: “崖绿”, “崖白”, “崖黑” and “崖红” — green, white, black and red “cliff”; this is how the same publication lists them.
  • According to the ministry’s description, drinks not made from the tea bush are also sold under the “唐崖” brand: “藤茶” from a liana of the grape family and “老鹰红” from the leaves of a plant of the laurel family.

12. Comparison with Other Teas

  • Anji Bai Cha (安吉白茶): A green tea of Zhejiang from the same variety 白叶一号 and with the same name trap.
  • Enshi Yu Lu (恩施玉露): A steam-fixed green tea from the same autonomous prefecture.
  • Hefeng Cha (鹤峰茶): A green tea of Hefeng County in the same prefecture.
  • Enshi Xicha (恩施硒茶): The prefecture-wide umbrella mark, whose list of brands includes Tángyá chá.

In Conclusion:

Tángyá chá is a green tea of Xianfeng County, named after the Tangya River and the Tangya tusi domain. Its main feature is the white-leaf variety 白叶一号, whose spring leaf turns white in the cold; by class such tea remains green. The protection requirements describe it sparingly — a needle-shaped emerald leaf and two groups of norms — while the description on the ministry’s website adds a tender, high aroma and a white leaf with emerald veins.
